Tasty Thursday ~ Bacon Guacamole Grilled Cheese Sandwich



I found this in the blog, Closet Cooking, and it is delish!!!!


A buttery and toasty grilled cheese sandwich stuffed with cool and creamy guacamole, crispy bacon and melted jack and cheddar cheese.  The crunchy crumbled tortilla chips in this grilled cheese pay tribute to the classic combination of tortilla chips and guacamole dip.

Servings: Makes 1 sandwich

Prep Time:  5 Minutes
Cook Time: 10 Minutes
Total Time:  15 Minutes

Ingredients
2 slices bacon
2 slices sour dough bread
1 tablespoon butter, room temperature
1/2 cup jack and cheddar cheese, shredded
2 tablespoons guacamole, room temperature
1 tablespoon tortilla chips, crumbled (optional)

Directions
1.  Cook the bacon until crispy and set aside on paper towels to drain.
2.  Butter one side of each slice of bread, sprinkle half of the cheese onto the unbuttered side of one slice
     bread followed by the guacamole, bacon, tortilla chips, the remaining cheese and finally top with the
     remaining slice of bread with the buttered side up.
3.  Grill over medium heat until golden brown and the cheese has melted, about 2-3 minutes per side.

Tasty Thursday ~ Five Minute Chocolate Mug Cake


Unfortunately, this is not an actual picture of what the recipe turns out to look like but it is what I wish it did look like. I haven't tried this yet, but a friend of mine loves it.


4 Tablespoons Flour

4 Tablespoons Sugar

2 Tablespoons Cocoa

1 Egg, beaten

3 Tablespoons Milk

3 Tablespoons Oil

3 Tablespoons Chocolate Chips (optional)

Splash of Vanilla Extract

1 Large (Microwave Safe) Coffee Mug



Add dry ingredients to mug and mix well. Add egg and mix thoroughly. Pour in milk and oil. Mix well. Add chocolate chips, if using, and vanilla then mix well. Place mug in microwave and cook for three minutes at 1000 watts. The cake will rise over the top of the mug, so don't be alarmed. Allow to cool a little and tip out onto a plate if desired. (I see me eating it straight out of the mug before it cools completely :-) ) Enjoy!!!!
